Lemon Glazed Christmas Cookies Recipe


These super cute Christmas cookies from the 28 Day Weight Loss Challenge look fancy but they’re actually quite straight forward to make. And then wait until you taste them! They are soft and buttery with a sweet-tart glaze, you won’t believe that they’re only 140 cals each.

They’re great cookies to make with the kids to take to a Christmas party or even to wrap in cellophane as little gifts for teachers, friends or family!

Ingredients

  • 1 cup butter
  • 1/2 cup maple syrup
  • 1/2 tsp vanilla
  • 2 1/2 cups plain flour
  • 2/3 cup custard powder
  • 1/2 tsp salt
  • 1 egg

Lemon Glaze

  • 1 cup icing sugar
  • 2 tbsp lemon juice
  • 2 tbsp Christmas sprinkles

  • 2 tbsp lemon juice
  • 2 tbsp Christmas sprinkles

Instructions

  1. Preheat oven to 160 degrees and line a baking tray with baking paper.

  2. In a large bowl beat butter, maple syrup, vanilla until smooth.

  3. Add flour and custard powder, salt and egg and beat together until a soft dough forms.

  4. Roll out the dough and using a Christmas tree cookie cutter, cut out cookies until you have a total of 25 tree cookies. Note: you use any Christmas cookie cutter shapes or use a piping bag and pipe out wreath shapes.

  5. Place in the oven for 15 minutes or until golden. You may need to do 2 batches depending on the size of tray.

  6. Allow to cool on the tray for 10 minutes then transfer to a wire rack until completely cool.

  7. In the meantime, make the glaze by combining icing sugar and lemon juice mix until smooth. If the icing mix is too thick add ½ a teaspoon of water to thin, continue bit by bit until you reach desired consistency. Drizzle cookies with glaze and top with Christmas sprinkles, set aside to set.

  8. 1 cookie is one serve, if you don’t have a piping bag, you can make your wreaths into cookies by rolling out the dough and using cookie cutters.

  9. Store cookies in an airtight container for 3-4 days.
